You say this is the headstone of Anna Frantz -- but I see Peter Heck on the actual headstone.

Good comment. Anna's name is obscured as well as the indication of why Peter Heck's name is on the tombstone. What the tombstone actually says is:

ANNA HECK
wife of
PETER HECK
DIED
...
